Abstract

The quality of milk is one of the most discussed topics currently in the national scenario of dairy activity. The study of the main points that interfere in the improvement of the raw material and its impact on the dairy chain becomes increasingly necessary for the standardization of the activity and thereby conquer new consumer markets, since this consumer is more demanding and, the demand increasing. The objective of this work was to evaluate the quality of raw milk throughout its production chain until arrival in the processing industry, depending on the type of milking, storage and transportation conditions through a systematic review of the literature of academic works last 10 years. Key words were defined to carry out the search, selecting the works by summary, and then filtering by complete article. At the end of the research, 19 articles were selected for evaluation in the areas of primary production, storage and transport of the raw material. It was identified that 100% of the studies presented unsatisfactory results in relation to the limit defined by the legislation for the Total Bacterial count, evidencing failures in the procedures adopted for the production of the raw material, storage and transport. The adequacy of the procedures adopted for milk production must be implemented in all the links of the chain, in order to guarantee production within the legal standards, having as objective the improvement of the income of the producer, better performance of the industries and safety to the final consumer.
